Food additives are substances that are added to food for the enhancement of its taste and appearance, and for preservation purposes. They resemble rough-skinned potato with an irregular shape and grow mainly in broadleaved woodland on soils that have high calcium carbonate deposits. The different types of truffles are the black truffle, white truffle, summer truffle and garlic truffle, each with minute differences in appearance, flavour and price. Truffles have a pungent aroma and strong flavours that make it a favourite food additive for chefs and food-lovers. Truffles are highly nutritious. Straddling the classification between a fruit and a mushroom, they are expensive because they are very difficult to farm- having a preference for specific kinds of trees and soil to germinate, and can’t just be planted in a field or a farm. In fact, hunting truffles sometimes requires the aid of animals. High in carbohydrate, protein and fibre, truffles also contain both saturated and unsaturated fatty acids. Micronutrients like phosphorus, sodium, calcium, vitamin C, magnesium, iron and manganese are also present in the fruit/ mushroom. Although truffles can be a complete source of proteins, the nutrient composition mostly varies according to species. Studies have revealed that truffles are high in antioxidants that reduce the risks of some chronic diseases, like reducing the growth of cancer cells and inflammation, as well as being high in anti-bacterial properties, hence, beneficial to human health. While further researches are on-going, the culinary delight of truffles continues to grow across boundaries and continents.
