Midway through a boring shop at a little deli, my mate pointed out a small bar on the shelf and I grabbed it mostly to humour them. I'd been making my own 100% dark chocolate for years and, frankly, assumed nothing sold would come close — a bit smug, I know. But one careful square of the Vanuatu later and all that scepticism just disappeared. Properly rounded bitterness, not harsh, and the texture genuinely surprised me. I went back the next week and bought more.
